Hey, South African bobotie tends to add the spice mix before the meat. That way you don't have to spend so long blending it in, the hot oil releases the flavours into every bit of the dish. The SA way saves more oven time too by doing a one-step not two-step bake, since the meat is already cooked - add the egg mix to the top of the baking dish and cook for about 20 minutes, or until the topping has browned a bit.
